So now that Christmas day has passed, it’s time to prepare for Epiphany or the 12th day of Christmas, the day the three kings arrived to visit the baby Jesus. Panettone is so last week. This week it’s all about the Pithvier, or galette des rois.
The galette is made of two circles of puff pastry (pâte feuilletée) that are filled with frangipane, an almond cream flavored with a dark spiced rum. The filling hides a special treat, a fêve, and whoever finds in their slice gets to be king for the day. This year we found ceramic fêves from France, which we’re pretty excited about. Yes, these are the kinds of things we pastry chefs get excited about.
We’ll have an 8″ Pithvier available on January 4-5 that feeds 6-8 people for $25. We’re accepting orders for them through January 12 as well.
Because we love the concept of puff pastry around a creamy filling, we’ve borrowed the idea for our chicken pot pie as well. Beginning in January, it’ll be available daily.
