Coconut macaroons have been staple at Les Madeleines since we opened in 2003. They remain a guest favorite and although the shapes have changed over the years, the recipe has stayed the same. Many visitors who have seen our eHow.com video on how to make macaroons have requested the recipe to go along with it.
1c. granulated sugar
2 tbsp soft butter
1/3c. egg whites
2 tbsp corn syrup
½ pound dessicated coconut (not sweetened)
Zest of ½ orange
2 tbsp orange juice
Cream the zest, butter and the sugar.
Add the corn syrup and egg whites; mix until smooth and creamy.
Add the orange juice followed by the coconut until well combined. Chill overnight.
Re-paddle the mix and make a test macaroon. If they don’t hold their shape, add a little extra coconut.
Bake at 350F for 12-14 minutes or until golden brown.
Dip in chocolate if you’d like.
